A beef burger with strawberries and coffee bread?! Our delicious Puro Brasile ground coffee allows for experimentation and integrates perfectly with the bun dough (it's no coincidence it's shaped like a coffee bean) which encloses a beef burger with lamb's lettuce, strawberries, cheese, and teriyaki sauce.
A very curious and delicious combination, perfect for a spring brunch.
This recipe is part of the "From Bean to Plate" recipe book created in collaboration with the talented ENAIP students from Lecco, Como, and Busto Arsizio, from the professional baking and pastry training course.
The young apprentice bakers accepted the challenge of using coffee as a raw ingredient and not just as a beverage accompaniment, studying savory and sweet recipes and unusual combinations according to the criteria that are most important to Caffè Milani: zero food miles, no-waste, and attention to the local area.
Ingredients for 4 buns:
- 245 g flour
- 110 g Caffè Milani Puro Brasile coffee
- 11 g butter
- 8 g fresh yeast
- 3 g salt
- 1 egg
Ingredients for the filling:
- 4 beef burgers
- cream cheese
- teriyaki sauce
- lamb's lettuce leaves
- strawberries
Method:
Knead flour, Puro Brasile ground coffee, butter, and fresh yeast. When the dough is smooth and homogeneous, incorporate the salt and egg. Let the dough rest for 30 minutes, divide it into four small spherical parts of 100g each. Let it rest for another 15 minutes.
Before baking, give the bun dough an elongated shape, making incisions on the top and bottom to give them the appearance of a coffee bean, and place them on a baking tray lined with parchment paper. Bake at 200°C in a static oven for 30 minutes.
Assembly:
Cut the coffee buns in half and brush the base with teriyaki sauce. Place the thinly sliced strawberries and the freshly cooked burger. Finally, spread the cheese on the meat and finish with the lettuce.
