Selection
The first essential step
Each batch of green coffee, arriving from select origins, is examined using rigorous protocols. Even a single defective bean can compromise the final result. That's why we use specialized tools for selection and quality control, guaranteeing a superior product from the very beginning.
Roasting
An ancient knowledge, today more sustainable
Roasting is the heart of our process. We use drum roasters equipped with catalysts to reduce emissions. This is where the bean transforms: color, aroma, and structure. Our Master Roaster knows the exact moment to best extract the sensory notes and respects every origin.
Mixing
An art of balance
Our blends are the result of knowledge passed down through generations, refined through continuous trials and rigorous laboratory testing. Some blends are made from 100% Arabica coffee, others combine Arabica and Robusta to create distinct aromatic profiles: some are full-bodied, with notes of cocoa, while others are more delicate, with floral and fruity aromas. Each blend is designed to offer a unique sensory experience.
Packaging
Preserving excellence
Packaging takes place on automated lines that seal the product in a protective atmosphere, preserving the coffee's freshness. The aroma created by roasting is thus preserved until extraction.

IFS Food - International Featured Standards
Thanks to our constant pursuit of excellence and obsessive care for our products, we have achieved the prestigious international IFS certification with top marks. The IFS Food standard , with product and process audits, evaluates a manufacturer's ability to provide safe, authentic, and high-quality products and helps companies meet growing demands for transparency and traceability.
Certified organic products (EC Regulation 848/18)
Our Action organic line is made with coffees grown without the use of chemicals and pesticides in compliance with European legislation (EC Regulation 848/18), which guarantees the compliance of organically grown products at all stages of the production chain, from field to cup.

Institute of Certified Italian Excellence
Our constant pursuit of perfection has earned our company and our products a place among the finest examples of Made in Italy. We've gone further by participating in a project aimed at promoting the excellence of Italian manufacturing with the Istituto Eccellenze Italiane Certified (Certified Italian Excellence Institute ). This project offers the opportunity to enhance our expertise as a company and as individual professionals, and provides tools and processes for describing our products.

Certified Italian Espresso (IEI)
Our blends have obtained the " Certified Italian Espresso " certification based on the rules established by technical specifications no. 0008 developed by the Italian Espresso Institute. Certified Italian Espresso was created to protect the tradition and quality of one of the world's most iconic symbols of Made in Italy. The Certified Italian Espresso profile, developed in partnership with the International Institute of Coffee Tasters (IIAC) and drawing on the expertise of the Tasters' Study Center, is the benchmark for this certification. This profile is the result of research conducted on thousands of consumers, enabling us to define public preferences and compare them with expert judgment.

IEI Premium
Our coffees have obtained the IEI PREMIUM recognition: a brand born from the desire of the Istituto Espresso Italiano to make top-of-the-range products recognizable and to offer consumers a guarantee of excellence.

The quality that guides us every day has been recognized by the Gambero Rosso 2026 Italian Coffee and Roasting Guide, which awarded Caffé Milani the prestigious Tre Macinini , the highest score available.
This result honors two products from our selection. ACTION : A blend of 100% organic Arabica beans from Brazil, Indonesia, Ethiopia, and Peru. Grown using traditional methods and without chemicals, it has always been a symbol of sustainability and authentic flavor. FINE CAFÈ : A blend of 100% ground Arabica beans from select Ethiopia, Brazil, and Colombia. A harmonious and intense cup, with notes of caramel and tropical freshness.
