Who said coffee and meat don't go well together? Or that coffee should be a side dish, not a main ingredient? Would you ever have imagined tasting gingerbread with coffee?
This is how the recipe book project was born, in collaboration with Enaip Lombardia , which can be consulted and downloaded, starting from Saturday 1 October, from our website in the section dedicated to sustainability projects.
One of the initiatives for the 85th anniversary is the creation of coffee-based recipes, thanks to the collaboration with the Enaip institutes of Como, Cantù, Lecco and Busto Arsizio.
The recipe book
A collection of sweet and savory recipes, as well as coffee-based pairings, according to Caffè Milani's criteria, with a particular focus on sustainability: zero-mile, zero-waste, and local produce.
So, together with the institutes, we experimented with coffee, making it a raw material, a fundamental ingredient for sweet and savory preparations, removing it from the role of breakfast or after-dinner drink to make it the protagonist of the gastronomic experience.
Enaip Cantù prepared a waste-reducing pastry recipe. Students in Como created a complete menu featuring coffee, tagliatelle, bread, a meat-based main course, and dessert. Students in Busto Arsizio developed two first courses, two desserts, and a baked good; while Enaip in Lecco created five savory and five sweet dishes paired with five drinks.
Video tutorials
In addition to these, the possibility of consulting four video tutorials of the recipes, one for each institute: risotto with coffee cream (Enaip Busto Arsizio), tagliatelle with coffee (Enaip Como), the dessert “From the earth to the earth” (Enaip Cantù), the dessert “Morbidoso orange and coffee” (Enaip Lecco).
The recipe book will be available for consultation starting Saturday, October 1st, the day the company celebrates its 85th anniversary on International Coffee Day.
